soup

i apologize for the lack in blog posts, aside from being sucked back into the insane schedule of architecture school, i am sick. when i am not thinking about school i am sitting on the couch thinking about soup. so this blog is dedicated to soups. three soups.

1. for any sicklings like me craving chicken noodle soup, but don't eat chicken, here is a great substitute:


Amy's no chicken noodle soup is about as close
as you will get to the campbell's version,
the only downside: about $3.00 a can.

2. here is my sickness soup that I invented last semester, it works like a charm, is healthy and surprisngly delicious. I don't measure things I just throw stuff into the the pot, even when following a recipe, so sorry for the lack of precise measurements. if you have organic ingredients available use them.

cure all cabbage soup
about half a head of cabbage
3-4 large carrots
celery
half an onion
lots of garlic
cubed tofu
salt
pepper
thyme
bay leaf
vegetable stock or water
hot sauce- a must for curing your sickness

saute onions and tofu in a little bit of olive oil, in the same pot you will cook the soup in, throw in the rest of veggies and garlic. after a little bit add vegetable stock or water. add herbs. boil. add hot sauce.


3. Here is my third soup recipe which isn't a cure all its just delicious and so easy!
Ginger Carrot Leek Soup
lots of chopped carrots
two leeks
onions/ scallions if you have em
freshly grated ginger
vegetable broth
salt
pepper

saute onions in olive oil, add leeks, carrots and ginger. add vegetable broth. boil until carrots are soft. add salt and pepper. turn off heat and go to town with an immersion blender making it thick and creamy (a regular blender will work too, its just messy).
